Baked White Rice

Ingredients
  

  • 1 1/2 cups organic long grain rice
  • 3 1/4 cups very hot water
  • 3 Tbsp coconut oil, melted

Method
 

  1. Pour coconut oil into 8x8 or 9x9 glass baking dish. Use a pastry brush to spread the oil evenly on the bottom and sides of the dish.
  2. Sprinkle rice evenly in the pan.
  3. Pour boiling water over all.
  4. Cover with foil and bake at 350° for 40 - 45 minutes.
  5. Let cool for about 5 minutes and then carefully remove the foil and fluff the rice with a fork.
