Chinese-Style Glazed Carrots

Method
 

  1. Put sliced carrots in a saucepan and add safe filtered water to cover. Bring to a boil, cover and reduce the heat. Simmer until fork tender, about 20 minutes. Drain in a colander.
  2. In the same saucepan, add honey, coconut aminos, garlic powder and grated ginger. Heat just until it starts to bubble.
  3. Return carrots to the pan and gently stir to coat. Transfer to serving dish.
