Method
- Sift flour, cinnamon, baking powder and baking soda into a mixing bowl.
- Add remaining ingredients in the order listed.
- Whisk until well blended.
- Evenly distribute in a standard muffin pan that has been greased.
- Sprinkle with cinnamon and sugar.
- Bake at 400° for 20 - 22 minutes.

Cinnamon and sugar mixture: Mix 1 Tbsp organic cane sugar or safe sugar substitute with 1/2 tsp cinnamon.
For Gluten Free Muffins, replace the organic flour with a gum-free gluten-free flour blend, and use gluten-free rolled oats.
