Ingredients
  

  • 1 1/4 cups organic flour
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 1/2 cups organic rolled oats
  • 1 cup organic unsweetened applesauce
  • 1/2 cup plant milk (no gums or carrageenan)
  • 1/3 cup raw, unfiltered honey
  • 2 – 4 Tbsp monk fruit sweetener
  • 2 large eggs
  • 1/4 cup olive oil
  • Cinnamon and sugar, optional

Method
 

  1. Sift flour, cinnamon, baking powder and baking soda into a mixing bowl.
  2. Add remaining ingredients in the order listed.
  3. Whisk until well blended.
  4. Evenly distribute in a standard muffin pan that has been greased.
  5. Sprinkle with cinnamon and sugar.
  6. Bake at 400° for 20 – 22 minutes.

Cinnamon and sugar mixture: Mix 1 Tbsp organic cane sugar or safe sugar substitute with 1/2 tsp cinnamon.
For Gluten Free Muffins, replace the organic flour with a gum-free gluten-free flour blend, and use gluten-free rolled oats.
