Ingredients

  • 12 Tbsp plant butter
  • 2 1/4 c. organic powdered sugar
  • 1/2 tsp nutmeg
  • 1/2 tsp vanilla
  • 3 large eggs
  • 1 1/2 c. organic flour, divided

Instructions

  • Beat together plant butter, powdered sugar, nutmeg and vanilla until well combined.
  • Add one egg and mix well.
  • Add 1/4 c. flour and mix well.
  • Repeat until eggs are all mixed in, and then add remaining flour.
  • Spread batter in a parchment lined loaf pan.
  • Bake at 325° for 60 to 70 minutes, or until a toothpick inserted in the center of the cake comes out clean.
  • Cool for 10 minutes and then remove from the pan.
  • If desired, sprinkle with additional powdered sugar.
