If you’re looking for a simple, satisfying, and Alpha-gal friendly meal, this Sausage and Zucchini Skillet is a go-to in my kitchen. It’s packed with flavor, comes together in one pan, and is perfect for busy weeknights when you need something hearty without a lot of fuss.
This dish highlights fresh vegetables and homemade ground turkey Italian sausage, giving you all the comfort of a traditional skillet meal while staying within Alpha-gal guidelines (for those who tolerate these ingredients).
Why I Love This Recipe
This skillet meal is:
- Quick and easy to prepare
- Made with simple, wholesome ingredients
- Full of flavor without complicated steps
- Flexible: great for using up extra veggies you have on hand
The combination of zucchini, yellow squash, and carrots creates a naturally sweet and savory balance that pairs perfectly with the seasoned turkey sausage.
How It Comes Together
To make this dish, I start by sautéing onions until they’re soft and fragrant. Then I add my homemade ground turkey Italian sausage and cook it until nicely browned.
Next, I add thick slices of zucchini and yellow squash, letting them cook until tender. A sprinkle of steak seasoning brings everything together with a bold, savory flavor. Finally, I stir in cooked carrots for a touch of sweetness and color. Carrots are optional, and can be left out for a lower carb meal.
It’s that simple. One pan, minimal cleanup, and a delicious result.
