Ingredients

  • 1 Tbsp olive oil
  • 1 onion, chopped
  • 1 lb. Homemade Italian Turkey Sausage, uncooked – Homemade Italian Turkey Sausage Recipe
  • 3 zucchini, thickly sliced
  • 3 yellow squash, thickly sliced
  • 1/4 c. water
  • 1-2 tsp steak seasoning
  • 1 lb. carrots, sliced and cooked

Instructions

  • Heat oil in a large skillet.
  • Saute onions until they are soft and beginning to brown.
  • Add Italian Turkey Sausage, cooking and breaking up into bite-size pieces.
  • Without stirring, add zucchini, yellow squash and water. Cover and cook on medium heat for 10 minutes. Stir, cover, cook, and repeat for 30-40 minutes, or until squash is cooked as desired.
  • Add cooked carrots and sprinkle with steak seasoning. Cook without covering until heated through.
  • Stir and serve.

Low Carb Option: Simply leave out the carrots, or substitute with another low carb veggie.
